Submitted recipe: German potato salad

German potato salad

7-9 boiled potatoes with skin on

6 slices of bacon

1 onion, diced

1 package polish sausage or Polska Kielbasa cut into thin slices

1 can chicken or beef broth

About 1/4 cup cider vinegar

About 1/2 cup sugar

About 2 tbs. flour

Salt and pepper to taste

Boil the potatoes, cool and slice. In the meantime, fry the bacon. When the bacon is crisp, remove from pan to drain.

In the bacon grease, cook the diced onion. When the onion is brown, add the sugar and cook until the sugar dissolves.

Crumble bacon and add to the onion in the pan. Add about 2 tablespoons of flour and stir. Stir in the chicken or beef broth and stir until thick.

Add the sliced sausage/Kielbasa and let cook for 2-3 minutes.

Add the sliced potatoes and stir to coat.

After the mixture boils, lower the heat and simmer for about 20 minutes.
