This 10-year-old breakfast spot is closing, but more of the restaurants are opening

Dec. 30—A decade after opening, the Jimmy’s Egg at Douglas and Hydraulic near Tanya’s Soup Kitchen has closed.

“We’ve expanded so fast, we’re just reallocating assets to different areas,” owner Wink Hartman Sr. said.

“You know times change,” he said. “It just didn’t meet the requirements.”

Hartman has new Jimmy’s Egg sites at Hawthorne Court, a shopping center near the northeast corner of 127th East and 21st streets, and is opening one in mid-January near the northwest corner of 37th North and Ridge Road.

“We’re spending a lot of money on new stores,” Hartman said. He said it’s all about “where best can you spend your money for growth?”

Hartman is looking at opening in the Hutchinson market for the first time, possibly followed by Salina.

“We’ll just have to wait and see how the new stores do.”
